Fresh ingredients…local produce…a true taste of Bali. This is the recipe for a richly flavored culinary experience integrated at the award-winning Seasalt Restaurant. Inspired by a neighboring organic salt farm, Seasalt is set in a traditional Balinese pavilion on a lotus pond. The restaurant’s dining concept is dedicated to fresh, healthy, ‘real cuisine’. Its East Balinese specialties feature the best local seafood selection. Its contemporary cuisine emphasizes naturally healthy ingredients. Our chefs are artisans in the kitchen, creating an exciting menu that ranges from light natural flavors and distinctive East Bali sensations to the Executive Chef’s innovative signature style – a blend of classic European culinary traditions and local produce from the region. The Alila Manggis Cooking School is where the team of chefs celebrate and share with you the true essence of the Balinese lifestyle through fascinating culinary adventures.
Introduction to Balinese Cooking
From the growing and harvesting process to the marketing and preparation of ingredients, understand how the cycle of daily life translates to the plate in traditional Balinese dishes.
After an early morning breakfast, visit Klungkung market and experience the amazing sights, sounds and aromas of one of the busiest village markets in East Bali. Return to the hotel to learn how to use the ubiquitous Ulekan (traditional Balinese mortar and pestle) to make the embodiment of Balinese cuisine – Bumbu Bali (Balinese curry paste) and Bumbu kacang (peanut sauce) – and prepare Balinese style nasi goreng (fried rice) in a wok and sate ayam (grilled chicken skewers). Then savour the morning’s handiwork over a leisurely lunch in the restaurant.
Organic Garden Adventure
Gain a new sense of taste as you rediscover the wholesome, nurturing flavors of unprocessed ingredients. Grow your awareness of sustainable farming which is sure to stimulate your appetite for a more healthy, balanced lifestyle.
After breakfast, head to our organic garden just 10 minutes from the hotel, hidden below the foothills of Mt Agung overlooking the sea. Our gardener Pak Sugita will reveal the techniques and agricultural practices of Balinese farmers, from the famed Subak (water irrigation) system to the rotation of crops in the rice fields.
Armed with boots and a rice hat, join in the action in the garden, collecting seasonal ingredients, walking the ducks, scaring the birds or simply waiting for the rice to grow from the shelter of a “kubu kubu” – a small hut built in the rice fields. Begin your organic cooking lesson with tastings from the garden followed by lunch in a traditional Balinese pavilion.
